This is a bit of a cheat but a really tasty way to liven up some salmon.


Ingredients

Makes 2 servings

  • 2 salmon fillets
  • ½ bottle of sweet chilli sauce (i use encona, you can get it everywhere)
  • 3 teaspoons capers

Preparation (Some HTML is OK)

Heat a small amount of flavourless oil in a frying pan on a med heat. Add your salmon fillets. Cook for 3 mins on first side, turn over and cook for a further 2 mins. Turn heat right down. Add a dash of water (1 to 2 tbsps) and the half bottle of sweet chilli sauce. Add the capers. When you've stirred it round and sauce just starts to bubble you are done. Serve with something green.

    Had this tonight, and it was lovely. Very very easy and really made a plain salmon fillet into a special meal in less than a minute
