Tangy Tomato Rice

This dish is a fantastically satisfying snack food, or a perfect accompaniment for sharp. fresh curries. It's pretty much a straight repost from this recipe at Masala Magic. I track a few Indian food blogs, and Masala Magic is one of my favourites. Don't follow me, follow her :).


Ingredients

Makes 2 servings

  • 2 fresh tomatoes
  • ½ medium sized onion, finely chopped
  • ½ green chilli, sliced, seeds in
  • 4 cloves garlic, crushed
  • 1cm of cinnamon
  • 2 cloves
  • 1 bay leaf
  • ¼ tsp mild Chilli Powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp Cumin seeds
  • 1 tbsp Oil
  • 4 fluid ounces of rice

Preparation (Some HTML is OK)

Cook the rice by your preferred method (mine is microwave rice cooker). Once it is cooked, spread on a plate and let it cool.

Meanwhile, in a pan heat the oil. Add the cumin seeds, bay leaf, cinnamon and cloves. After about 1 minute add the chopped onions, chopped green chilli and the crushed garlic and saute until the onions are a golden brown.

Add the chopped tomatoes, chilli powder, paprika and salt. Saute for about 5 to 7 minutes or until the tomatoes become pulpy and oil leaves the sides of the pan.

Add the cooked rice and mix well. Mix gently to ensure the rice grains do not break.
