When you have to serve a bunch of people for breakfast, you could buy a couple of dozen eggs...or you could buy just one Ostrich egg.


Ingredients

Makes 10 servings

  • 1 ostrich egg
  • 6 tsp tarragon, (fresh and diced)
  • 3 tablespoons of butter

Preparation (Some HTML is OK)

1. Beat the egg.

2. Pass the beaten egg through a sieve to remove any of the fatty chunks that seem to clump up when the egg is cooked.

3. Add the tarragon and beat again. Season with salt and pepper.

2. Melt the butter in the pan. Add the egg, cook over a medium head and stir constantly until the egg scrambles.

    Did you eat it all? I heard an ostrich egg is equivalent to something like 2 dozen chicken eggs...
