What can I say ... everyone tells me its the Best Salad in the World!
Try it and see for yourself ...


Ingredients

Makes 4 servings

  • 1 large bag of baby spinach leaves
  • 1 bag of pine kernels
  • 2 ripe avocados
  • 1 punnet of cherry tomatoes
  • 1 bunch of spring onions
  • 1 cucumber
  • Extra Virgin olive oil to taste
  • Balsamic vinegar to taste
  • Sea salt and ground black pepper to taste

Preparation (Some HTML is OK)

1. Brown the pine nuts very gently over a low heat until golden. Keep stirring with a wooden spoon and DO NOT leave them as they can burn very quickly.
2. Cut the avocados in half, remove the stone and use a knife to make diagonal slices 2cm apart in one direction, then make perpendicular diagonal slices to create a cross hatch pattern. (Sounds complicated but basically you want to end up with a checker board effect in the avocados)
3. Use a tablespoon to scoop out the avocado into a bowl, cover with lemon juice and gently stir so the irregular cubes break apart. Season.
4. Cut the cheery tomatoes in half.
5. Cut the ends of the spring onions and peel away skanky bits ... slice approximately 1cm apart.
6. Slice approximately 1cm apart and cut slices in to quarters.

Place a spinach leaves in a salad bowl and add all the other ingredients gently, then top with the pine nuts.

Add your own combination of extra virgin olive oil, balsamic vinegar and seasoning to dress the salad.
