The process of toasting the rice before adding liquid adds an extra flavour dimension. Easily increased.


Ingredients

Makes 2 servings

  • 200g basmati rice
  • 1 tbsp vegetable oil
  • half a medium onion, finely chopped
  • 2 cardamom pods
  • ½ tsp black mustard seeds
  • ½ tsp cumin seeds
  • ½ tsp salt
  • 325ml boiling water
  • knob of butter (optional)

Preparation (Some HTML is OK)

Preheat the oven to 200C / 180C (fan).

In a medium, oven-proof saucepan (preferably with a lid - otherwise you will need to improvise with foil later), mix the rice, oil and onion. If you rinsed the rice, then make sure that it is completely dry, and add 5-10 minutes to the toasting time.

Put the pan in the oven and toast, uncovered, for 30 minutes, stirring every 5 minutes. The rice will become a light golden colour, and the onion will cook. After 25 minutes of the toasting time, add the spices and mix in.

Add the salt, water and knob of butter, cover tightly, and return to the oven to cook undisturbed for 20 minutes.

Fluff and eat.
