I've been looking for a super salsa recipe for ages and now I've found it. And hoorah its super easy too.


Ingredients

Makes 4 servings

  • 1 quarter red onion
  • 1 green chilli (de-seeded)
  • 1 spring onion
  • 1 clove garlic
  • 4 normal-sized tomatoes (or equivalent)
  • 1 tsp olive oil
  • 1/2 to 1 tsp salt
  • juice of 1 lemon
  • 1 tsp tomato puree
  • 1 tbsp water

Preparation (Some HTML is OK)

Combine the red onion, green chilli, spring onion and garlic in a food processor. Process until finely chopped.
Add the tomatoes (whole, with skins and seeds all ok!), olive oil, salt, lemon juice, tomato puree and water. Pulse the food processor until just chopped, you want it chunky. Transfer to a bowl and check whether the salt is right. Leave for 1/2 to 1 hour for the flavours to infuse.

    Made this with half a white onion today instead of the red onion and spring onion and it still tasted pretty good.
