Ingredients

Makes 8 servings

  • 125g butter (at room temp or defrosted in microwave for 30sec)
  • 200g caster sugar
  • 2 eggs
  • 50g cocoa
  • 100g good dark chocolate
  • 75g self raising flour

Preparation (Some HTML is OK)

Cream the butter and sugar together. Beat in the eggs one at a time. Stir in the cocoa.
Melt the chocolate with 1 tbsp water (30 secs in microwave should do it).
Mix the melted choc into the mixture and finally mix in the flour.
Pour the gooey mixture into a greased and lined baking tin. The tin needs to be at least a couple of cms deep and works best if rectangular 15x25cm ish. Don't worry if you don't have the exact size though - just the ones round the edges will be a bit messy. I normally line the tray with a tefal non-stick cooking mat as this makes it even easier to get out.
Cook in a pre-heated oven at 150'c fan for approx 40 mins. The key to good brownies is getting them out just at the right time. You want cracking slightly on top and still a little gooey (but not uncooked and wobbly) when you stick a fork in.
Empty the whole tin out onto a plate upside down. Cut into squares after cooling for 5 mins or so and cool completely on a wire rack.
