Ingredients

Makes 2 servings

  • 2 trout fillets
  • 6 spring onions, finely sliced lengthways
  • For the sauce
  • 3 tbsp chinese rice wine
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic
  • 1 tbsp pureed ginger
  • ½ tsp dark brown sugar

Preparation (Some HTML is OK)

1. Cook the trout how you will. I generally poach it, but you can steam, bake or grill.
2. Make the sauce by putting all the ingredients in a pan and heating up until the sauce starts to thicken slightly.
3. Sprinkle the spring onions over the trout and then cover with sauce.
4. Serve with sauteed potatoes and a green vegetable stir fry.
