A simple veg curry that I make even simpler by using frozen veg from a packet! A pre-prepared Madras type curry powder would also work well instead of all the individual spices.


Ingredients

Makes 2 servings

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • ½ tsp mustard seeds
  • 1 onion
  • 2 cloves garlic
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ¼ tsp turmeric
  • 1 tsp mild chilli powder
  • 1 tsp salt
  • 1 tin chopped tomatoes
  • 2-3 handfuls of pre-chopped veg (I used a frozen mix of green beans, peas, sweetcorn, red pepper, carrot)

Finely chop the onion and garlic (I use the magimix here). In a deep wide frying pan heat the oil and whole spices together until the spices are just starting to pop. Add the chopped onion and garlic, stir and reduce the heat. Sweat the onions in the pan for up to 10 mins until they are translucent. Add the ground spices and salt, then stir in thorougly before adding the chopped tomatoes. Add your choice of veg and then simmer gently for 1/2 an hour. Can be frozen.
