Adapted from Antony Worrall Thompson's GI diet book; his recipe feeds 4, but frankly if this is divided into four servings, you're just going to want to eat a thick slice of bread afterwards and undo all your good work - so you might as well have a bit more steak and raw veggies imo :)
Ingredients
Makes 2 servings
- 2 sirloin steaks
- 1 chilli (I use scotch bonnets, but use less hot ones if you prefer)
- 2 cloves of garlic, peeled and thinly chopped
- 1 tbsp of soy sauce
- 1 tbsp of nam pla (fish sauce)
- juice of 1 lime
- ½ tsp of sugar
- 1 red pepper
- 1 yellow pepper
- 6 spring onions
- ½ cucumber
- 2 tbsp chopped fresh coriander
- raw peanuts
Preparation
1. Put the soy sauce, nam pla, chilli, garlic, lime juice and sugar in a bowl and mix well.
2. Grill the steak to a state of your own choosing.
3. Slice the cooked steak and add to the bowl. Give everything a good stir.
4. Give the mixture a sprinkle of raw chopped peanuts and/or sesame seeds.
The original recipe had fresh mint in it, but I didn't really like it.
