This is a totally tasty, heartwarming, easy to make and healthy chilli recipe. Spice it up or down by altering the number or heat of the chillies!!


Ingredients

Makes 4 servings

  • 400g lean minced beef
  • 1 onion chopped
  • 3 garlic cloves crushed
  • 2 red chillies
  • 2tsp cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • Pinch of cayenne pepper
  • 1 tin of chopped tomatoes
  • 1.5 tbsp tomato purée
  • 1 beef stock cube
  • 1 tin red kidney beans
  • Fresh coriander and sour cream to serve
  • 1 tsp Olive oil to cook

Preparation (Some HTML is OK)

Heat the olive oil in a pan (medium/high heat).
Fry off the onion until it's transparent.
Add the dry spices and cook for 1 min, then add chill and garlic and cook for another minute.
Add the mince and cook until brown.
Add tomatoes, purée and stock cube and stir well.
Lower the heat to medium low and cook for about 15 mins.
5 minutes before you serve, drain and rinse the kidney beans, add to the pan and mix well.
Serve with fresh chopped coriander and sour cream.
This is yummy, with chips, salad, jacket potato, rice and pasta.
