Fish (pollock) fingers

As the chicken ones were such a success I tried it with fish and it was equally good. I used pollock as its the new 'eco' fish and also is rich in omega 3. These can also be frozen and reheated.

A bunny cake created from single classic sponge cake -- a Betty Crocker design. You could even use a carrot cake as the base. An obvious choice for our little girl's March birthday, surrounded by easter eggs.

Cocoa and raisin cereal bars

Delicious, pretty healthy and ridiculously easy. Made them for the kids but the adults have scoffed the lot. Inspired by the extremely expensive Organix bars of the same name. Keep for ages (2 weeks+) and great for lunch boxes or emergency snacks.
