Cabbage and Red Lentil Daal
(3)
by

A whole meal in one pot, or a fantastic accompaniment to pretty much any curry. This is really satisfying comfort food, and a piece of cake to cook. It's ripe for all sorts of variations; stir fry pretty much what you like and whack it in at the end.

Lemon Coriander Chicken

This is genuinely one of the tastiest and most unusual dishes I have ever cooked. It's only a slight variation of (at least in my opinion) the best recipe in Madhur Jaffrey's fantastic Ultimate Curry ...

Chicken Biryani

This chicken biryani is the best that I've found. I think that it originated in one of Madhur Jaffrey's books, but I've made some adaptations over the years. It can be served either with a vegetable curry or a simple tomato/red onion/coriander salad. Don't be put off by the time taken to make this ...

This dish is a fantastically satisfying snack food, or a perfect accompaniment for sharp. fresh curries. It's pretty much a straight repost from this recipe at Masala Magic. I track a few Indian foo...

Ginger and Coriander Chicken

Sharp, fresh and unusual. This isn't a tomato or coconut curry which, when you cook curries regularly, is a real bonus. This is based on the pepper chicken from Anjum Anand's Indian Food Made Easy but I honestly prefer my version - more ginger, more heat, less salty. Remember, you don't have to e...

Simple and filling daal, fantastic as either a main or a side dish. Can be made in advance and reheated; freezes well too.

Chicken and Spinach Curry
(1)
by

Really tasty curry with the gravy made entirely from spinach and onions. It's very green looking and has a superb flavour. Fresh, sweet and tasty with just a pinch of heat. Fairly easy to cook and no messing about in stages, which means you can knock it out fairly quickly.

My favourite of all my curry recipes. This one is beautifully balanced; not too hot with some beautiful flavours. If my wife's opinion counts for anything this is the one you should cook! The beaut...

Cauliflower Bhaji

I serve this as an accompaniment to all curries. I tend not to eat rice or bread myself, so this is my main side dish with all the curries I cook. This is a variant of Madhur Jaffrey's Cauli Bhaji - I've taken out all of the heat and added more ginger, more cumin and the lemon juice for more fresh...

Chicken and Tomato Garlicky Curry

So, like all part time chefs, I only cook on special occasions. This is a real special occasion dish. Very very rich, bit of a faff to make, as hot as you want. It's one of my homages to British Curry house culture - trying to make my own equivalent of my favourite curry; Garlic Chilli Chicken. ...
