Chocolate Fudge cake (1) by claire

Just like the sort you get in restaurants and very easy to boot. Serve with vanilla ice cream and chocolate sauce or make a chocolate frosting and serve as 'real' cake. Adapted from a Gordon Ramsay recipe.

Texan chilli beef stew (slow cooker) (1) by claire

As stew is our staple winter food, I like to try as many different varieties as possible. This is kind of like a chilli - you can even add a tin of kidney beans - I would but my husband says they are too farty! It is however really tasty and melts in your mouth. Vegetable curry (1) by claire

A simple veg curry that I make even simpler by using frozen veg from a packet! A pre-prepared Madras type curry powder would also work well instead of all the individual spices.

Spinach and ricotta cannelloni (1) by claire

This is a great recipe for vegetarians. My daughter dislikes anything with meat in it so this is perfect for her. As usual I make this in batches and freeze.

Easy low fat chicken curry (2) by claire

I cook this when I really fancy a curry but the thought of a takeaway fills me with guilt. It really is very simple - very little prep and a minimum amount of washing up.

Fish (pollock) fingers (2) by claire

As the chicken ones were such a success I tried it with fish and it was equally good. I used pollock as its the new 'eco' fish and also is rich in omega 3. These can also be frozen and reheated.

Chicken goujons (1) by claire

A simple way to make your own chicken goujons - great for kids. You can make these in bulk, freeze them and cook them straight from the freezer.
