Fish (pollock) fingers

As the chicken ones were such a success I tried it with fish and it was equally good. I used pollock as its the new 'eco' fish and also is rich in omega 3. These can also be frozen and reheated.

Easy low fat chicken curry

I cook this when I really fancy a curry but the thought of a takeaway fills me with guilt. It really is very simple - very little prep and a minimum amount of washing up.

This is a great recipe for vegetarians. My daughter dislikes anything with meat in it so this is perfect for her. As usual I make this in batches and freeze.

Vegetable curry

A simple veg curry that I make even simpler by using frozen veg from a packet! A pre-prepared Madras type curry powder would also work well instead of all the individual spices.

Texan chilli beef stew (slow cooker)

As stew is our staple winter food, I like to try as many different varieties as possible. This is kind of like a chilli - you can even add a tin of kidney beans - I would but my husband says they are too farty! It is however really tasty and melts in your mouth. You can obviously cook it for less...

Chocolate Fudge cake

Just like the sort you get in restaurants and very easy to boot. Serve with vanilla ice cream and chocolate sauce or make a chocolate frosting and serve as 'real' cake. Adapted from a Gordon Ramsay recipe.
