Chicken and Tomato Garlicky Curry (6) by offmessage

So, like all part time chefs, I only cook on special occasions. This is a real special occasion dish. Very very rich, bit of a faff to make, as hot as you want. It's one of my homages to British Curry house culture - trying to make my own equivalent of my favourite curry; Garlic Chilli Chicken. ...

Chicken and Spinach Curry (1) by offmessage

Really tasty curry with the gravy made entirely from spinach and onions. It's very green looking and has a superb flavour. Fresh, sweet and tasty with just a pinch of heat. Fairly easy to cook and no messing about in stages, which means you can knock it out fairly quickly.

Stifado by Hawthorne

Stifado is a Cypriot beef stew with onions, usually served with bulgar pilaf (recipe is also on Forkd!).

Chicken Biryani (5) by Hawthorne

This chicken biryani is the best that I've found. I think that it originated in one of Madhur Jaffrey's books, but I've made some adaptations over the years. It can be served either with a vegetable curry or a simple tomato/red onion/coriander salad. Don't be put off by the time taken to make this ...

Brinjal (Aubergine) Bhaji (3) by offmessage

A sumptuous side dish; rich and filling. The richness and oiliness make it hard to eat a lot of this dish, but it acts as the perfect foil for sharper dishes. Absolutely gorgeous. This is a simplification of the Boorani recipe in the indispensable Madhur Jaffrey's Curry Bible.

Sweet Onion and Chicken Curry (3) by offmessage

An almost dry dish with very little sauce. This is beautifully balanced; the heat from the chillis is offset nicely by the sweetness of the onions and coriander, making for a really interesting and quite subtle set of flavours. It's really easy to make too, with only a little prep and a short cooki...

Chicken Vindaloo (3) by offmessage

Hot, sharp, genuinely interesting; this isn't as hot as its British curry house counterpart. Instead this is based on more traditional recipes (primarily this one at Aayi's recipes). Worth noting that, whatever we may have been led to believe, the aloo in vindaloo doesn't mean potatoes. Instead it...

Paneer Jalfrezi (4) by offmessage

A vegetarian main for 2 or a lovely side for 4. (Paneer is a very simple unsalted Indian cheese, by the way). Makes a really colourful addition to any plate, as well as being seriously tasty. I'm told that it's very easy to make your own paneer, but I must admit to having bought a pack from Sains...
