Chicken and Spinach Curry
(1)
by
offmessage
Really tasty curry with the gravy made entirely from spinach and onions. It's very green looking and has a superb flavour. Fresh, sweet and tasty with just a pinch of heat. Fairly easy to cook and no messing about in stages, which means you can knock it out fairly quickly.

Inspired by something I saw recently on a blog whose name I don't recall, these make for a nice light lunch. The recipe makes 6, which nicely serves a family of two adults and two kids!

Spinach is a fantastic vegetable, rich in lots of marvellous vegetably goodness, and very tasty to boot. This is a great way of serving it as a side dish to a curry. The big problem with spinach is it's uncooked bulk - really you want a 1/2 pound to a pound of spinach per person for this dish, w...

Spinach and Pea Rice

A rich rice dish. Perfect with a simple main dish; also makes a fantastic veggie one pot if you're looking for something quick and healthy (and low GI). If you've got frozen spinach and frozen peas to hand this is a microwave marvel!

This is a great recipe for vegetarians. My daughter dislikes anything with meat in it so this is perfect for her. As usual I make this in batches and freeze.
