Adapted from Antony Worrall Thompson's GI diet book; his recipe feeds 4, but frankly if this is divided into four servings, you're just going to want to eat a thick slice of bread afterwards and undo all your good work - so you might as well have a bit more steak and raw veggies imo :)

The secret is in the steak. We find ribeye or sirloin steak has enough marbling in it to deliver BIG flavour ... and cooking it "rare" enhances nature!

Steak with a Creme Fraiche & Cracked Black Pepper Sauce (1) by Row

Pinched from St Delia and duly adapted. Her recipe uses Sirloin steak, but the sauce works well with Ribeye (which I use), rump or fillet. Serve with a baked potato and green salad.

Parsley pesto lamb steaks (1) by Jared

Ok, so it isn't really pesto...since it's missing the pine nuts and parmesan, but it's close. I like to leave the lamb marinade for a bit, but you can just stick it straight on the grill if you're in a hurry.
