My own version of this classic African Sweet Potato Stew. Everyone I've ever made this for goes mad fer it. Plenty of forking opportunities too!


Ingredients

Makes 0 servings

  • 1 large red onion
  • 1 large green/red chilli depending on heat preference
  • 2 cloves garlic
  • 3 sweet potatoes
  • 1 tsp ground cumin
  • 1 tsp ground tumeric
  • 2 tsp paprika
  • ½ tsp garam masala
  • ½ tsp ground cinnamon
  • 2 tins chopped tomatoes
  • ½ pint vegetable stock
  • 1 tbsp crunchy peanut butter (more if preferred)
  • Medium-sized punnet of mushrooms (approx 150g)
  • Large bag of baby spinach
  • Large bunch of fresh coriander

Preparation (Some HTML is OK)

Chop onions and sweat in olive oil on a low heat. Add all the spices and cook until onions are soft. Add peeled sweet potatoes, chopped into 2" cubes. Stir and cook for 5 mins. Add finely-chopped chilli and garlic. Cook for 5 mins. Add chopped tomatoes and vegetable stock. Season and turn up heat. Allow to simmer for 20-30 mins. Add quartered mushrooms, finely-chopped coriander (leave some over) and peanut butter. Cook for another 20-30 mins or until sweet potatoes are tender. Stir in spinach until it has wilted. Add final sprinkling of chopped coriander. Serve with plain couscous.
