A beautiful purple colour, and a great way to use all those free blackberries hanging around in the autumn. You'll need an ice cream machine.


Ingredients

Makes 6 servings

  • 250g/9oz blackberries
  • ½ vanilla pod
  • 150ml/5fl oz cream
  • 150ml/5fl oz milk
  • 3 egg yolks
  • 95g/3½ oz sugar

Preparation (Some HTML is OK)

1. Place the blackberries, 15g/½ oz sugar and a little water in a pan and heat for 5 minutes. Leave to cool.
2. Scrape vanilla seeds into a bowl containing the cream and milk. Place the bowl over simmering water and heat gently but do not boil.
3. Beat the egg yolks and 80g/3oz sugar until fluffy. Add the cream/milk to the eggs/sugar and mix. Return the custard to the bowl and continue to cook gently over the simmering water until the mixture fully coats the back of a spoon. Stir occasionally.
4. Meanwhile drain the blackberries and retain the liquid. Push through a sieve to form a purée, adding a little of the retained liquid to thin if necessary.
5. Mix the purée with the custard. Churn in an ice cream maker for approximately 40 minutes or until blended.
