Simple, comforting winter warmer.


Ingredients

Makes 4 servings

  • 1.5kg potatoes
  • 1 tsp salt
  • 300-400g grated Cheddar cheese
  • 25g butter or margarine
  • splash of milk

Preparation (Some HTML is OK)

1. Peel the potatoes. Cut into evenly sized pieces, and boil in salted water for 20-30 minutes until cooked through.
2. Preheat oven to gas mark 6, 400F, 200C.
3. Grease an ovenproof dish.
4. Drain the boiled potatoes. Mash with the butter. Add a splash of milk and continue mashing until smooth.
5. Stir in grated cheese to taste. How much you need depends on the strength of your cheese. If using strong extra mature Cheddar, 300g is probably enough.
6. Turn the mixture into the greased ovenproof dish, and bake for 30 minutes or until the top is golden brown.

If you like, you can add a peeled, quartered onion to boil and mash in with the potatoes, to give a little extra flavour.
