Simple chicken paella.


Ingredients

Makes 3 servings

  • 2 x Chicken breast, chopped
  • 1 chopped onion
  • Chorizo, chopped
  • Spring onion
  • Tomatoes
  • 2 lemons, quartered
  • Pinch of saffron or good pinch of turmeric
  • 2 bay leaves
  • Cup or two of rice
  • Chicken or vegetable stock

Preparation (Some HTML is OK)

Get yourself a reasonable sized frying pan.
Fry 1 chopped onion and some garlic in a little oil until soft. Put a lid on the pan if you want, it helps to soften it. Remove from pan.
Fry some chopped up chicken breast until no pink bits on the outside.
Put the onion back into the pan, along with whatever other ingredients you fancy. In this case, I've gone for chopped chorizo, spring onion and a couple of orange tomatoes.
Add one or two quartered lemons, a pinch of saffron, or some turmeric if you don't have any saffron, and a couple of bay leaves. Maybe chuck in some other herbs at this point too, along with a bit of salt and pepper.
Pour some rice over the top, then cover it with some chicken or vegetable stock.
Cook over a low heat until the rice absorbs all the stock.
Remove the bay leaves before serving.
