Tried and tested, best ever chilli recipe. The secret ingredient is cocoa, which adds depth and richness.


Ingredients

Makes 4 servings

  • 1 tbsp vegetable oil
  • 1 large onion (or 2 small) chopped
  • 3 cloves garlic
  • 2 fresh green or red chillis
  • 500g lean steak mince
  • 1 tsp mild chilli powder
  • 1 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp cocoa powder
  • 1 tsp salt
  • juice of 1 lime
  • 1 tin tomatoes
  • 1 tin red kidney beans

Preparation (Some HTML is OK)

In a large casserole or saucepan, gently fry the onions for about 5 mins, until translucent.
Chop and de-seed the chillis (to cut it into rounds: cut the top off, hollow out the seeds with an apple corer or the top of a veg peeler, then cut into circles.)
Add the chillis and roughly chopped garlic to the onions and fry for a further couple of minutes.
Add the mince and continue frying until browned. Then add the chilli powder, cumin, paprika, salt and cocoa and stir in. Finally add the lime juice, tinned tomatoes and kidney beans. Cook on the lowest heat for about an hour, lid on. Leave to cool and stand for a few hours. Re-heat to serve. Freezes well.
