num num num num... gooey and crunchy and oh so good...

DON'T skimp on the quality of the chocolate, it makes a big difference!


Ingredients

Makes 8 servings

  • 4 oz butter/good margarine
  • 6 oz caster sugar
  • 2 eggs
  • 1 1/2 oz chocolate (pref 75%, but above 60% is a must)
  • 2 oz pecans (optional)
  • 1 tsp vanilla essence
  • 2 tsp coffee granules
  • 2 tbsp warm water
  • 1 tsp baking powder
  • 2 oz flour
  • 2 oz cocoa powder

Preparation (Some HTML is OK)

Preheat oven to 180c/350f/gm4 and line tin with greaseproof.
Cream together butter and sugar until pale and fluffy. Beat in eggs one at a time.
Chop choc and pecans and fold them in along with the vanilla extract.
Dissolve the coffee in the warm water and add.
Add baking powder, flour and cocoa. Mix well.
Spoon into the tin
Bake for 25-40 mins, (it will still seem gooey and under cooked! Trust me here...), allow to cool IN the tin for 10 mins and then cool on a rack.

Cut into pieces and try not to eat all at once :)
