An excellent pasta casserole dish that is cheesy and a bit spicy. This dish is easy to make and freezes or reheats well. Also good with chicken as a replacement for the shrimp.


Ingredients

Makes 8 servings

  • 1 1/2 lbs. grilled and marinated shrimp
  • 1 lb. angel hair pasta
  • 1 lb. Velveeta cheese
  • 1 stick butter
  • ½ box crumbled feta cheese
  • 1 can Rotel tomatoes
  • ¼ tsp minced garlic
  • garlic salt
  • black pepper
  • parsley

Preparation (Some HTML is OK)

Prepare angel hair pasta according to directions and set aside.
Thaw shrimp in microwave and set aside.

Melt Velveeta cheese and butter in microwave. Add feta cheese, Rotel tomatoes, and minced garlic to the melted cheese. Add garlic salt, black pepper, and parsley to taste.

Mix the pasta, cheese sauce, and shrimp and place in a 9x13 casserole dish. If the mixture looks too stiff, add a bit of milk.

Heat covered at 350 degrees for 45 minutes or until bubbly.
