This is one of my own recipes, it’s a tangy, but sweet and luscious dessert. You never quite lose the soft, mellowness of the white chocolate, despite the cut of the lime. Also, it’s an easy – yet impressive dessert to make, perfect for any get together! Bon appetite!

The rum flavour is not very distinct, but it adds a certain something.


Ingredients

Makes 6 servings

  • Juice of about 4 limes
  • Zest from 1 lime
  • 1cl white rum
  • 200g white chocolate
  • 2dl double cream
  • ½ ts Vanilla extract
  • Boiling water
  • 2 egg yolks
  • About 6 tins or moulds about the size of a small teacup
  • Utensils
  • Pot
  • Glass bowl that fit in the pot
  • Large bowl
  • Whisk
  • Spatula

Preparation (Some HTML is OK)

1. Break up the chocolate and pop it in your glass bowl. Place the bowl over a pot of boiling water and add the vanilla.
2. While this melts, (stirring it occasionally) – zest the lime and squeeze the juices out of them. When the chocolate is melted, remove it from the heat and add the rum, yolks, zest and lime juice. Make sure the yolks don’t get scrambled when adding it in by stirring it in quickly.
3. Now grab your double cream and whip it up real hard until its soft semi-hard peaks.
4. Stir half the whipped cream into the chocolate and lime mixture until combined, then fold this into the rest of the whipped cream.
5. Portion this into the moulds and leave to set for about two hours.
