One of our favourite dishes ...


Ingredients

Makes 2 servings

  • 2 pork chops with rind
  • 2 sprigs thyme (rosemary or oregano work just as well)
  • 2 cloves of garlic, squashed with skin left on
  • 2 glasses white wine
  • fresh ground black pepper & sea salt
  • 2 tbs olive oil

Preparation (Some HTML is OK)

1. Preheat oven to 220C

2. Season pork chops with pepper.

3. Heat non stick pan, add olive oil then brown pork chops for 2 minutes each side to brown.

4. Remove pork chops from pan and add to an oven proof dish, season with sea salt. Arrange pork chops, so that the meaty part is laying in the dish and the rind is resting on the edge. This way the meat will cook in the wine and the rind will crisp up.

5. Using the same non stick pan with pork juices, add the garlic and gently fry for 1 minute, then add thyme and wine, mixing well. Pour over the pork chops in the oven proof dish.

6. Bake for 15 minutes (or until done)
