Homemade fishcakes.


Ingredients

Makes 4 servings

  • Small tin of red salmon
  • One medium potato
  • 3 shallots or 1 small onion
  • Tomato ketchup
  • Salt & Pepper
  • 1 medium egg, beaten
  • Polenta (uncooked)

Preparation (Some HTML is OK)

Boil and mash the potato.

Add it to the salmon, along with the finely chopped shallots, a splodge of ketchup and seasoning to taste. Mix together until the ingredients are blended.

Add the beaten egg to bind together.

Make fishcakes to preferred size and then dip into polenta for the coating.

Shallow fry until golden brown on both sides.
