Green and tasty spinach soup


Ingredients

Makes 3 servings

  • 400g spinach
  • 1 onion, chopped
  • 1 potato, diced
  • 1 lemon, zested
  • 1 garlic clove, chopped
  • vegetable stock, about 1 pint
  • little bit of double cream

Preparation (Some HTML is OK)

Fry the onion and garlic until soft.
Add diced potato, fry a bit longer.
Add vegetable stock, simmer until potato is cooked.
Add half the spinach, and some lemon zest.
Put the lid on the pot for 10-15 minutes until the spinach is all wilted down.
Leave to cool.
Add to blender, but don't blend it yet
Add the remaining spinach to the blender, this helps make it a nice rich green.
Blend.
Return to pot and heat.
Season to taste.
Put in bowls, add a spoon of double cream in a swirl.
