Tasty grilled salmon. Incredibly simple. Just marinade for about 2 hours and grill for 10 mins. Serve with steamed veg like pak choi, mushrooms or cabbage (or all three) and noodles.


Ingredients

Makes 2 servings

  • 2 salmon pieces
  • Marinade
  • ======
  • 1 thumb ginger
  • 2 cloves garlic
  • 1 tbsp nam pla
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • ½ cup water
  • Optional
  • =====
  • Pak choi
  • mushrooms
  • cabbage

First make your marinade by grating the ginger and garlic and mixing in all the other marinade ingredients. Put the marinade in a wide bowl (big enough to take the 2 bits of salmon). Put the salmon in the bowl skin side up and scoop up some of the marinade to cover all the salmon. Leave for about 2 hours.

To cook your salmon, place in a med-hot grill for about 5 mins each side until golden brown and cooked through.

An extremely tasty accompaniment is vegetables or noodles steamed in the remains of the teriyaki marinade. To do this, take a wide lidded saucepan and tip in the marinade. Put the lid on. On a med-high flame, heat the marinade for several minutes until bubbling and steamy. Add in your chopped veg (pak choi, cabbage, mushrooms are my favourites) or your noodles and stir. Quickly replace the lid and cook for 5 mins.
