Wonderfully creamy, authentic and delicious ice cream. Simple to make and loved by everyone.


Ingredients

Makes 6 servings

  • ½ pint milk (whole, semi or skimmed all fine)
  • 1 inch vanilla pod
  • 1 egg yolk
  • 4 heaped tablespoons caster sugar
  • 300 ml double cream
  • Utensils
  • Ice cream maker

Preparation (Some HTML is OK)

Put the milk into a microwaveable jug (or a saucepan if you'd prefer to use the hob). Cut approx 1 inch of vanilla, cut open and push the seeds out into the milk then toss the whole thing in.
Heat the milk on medium/60%/whatever your setting is for not full power for 5 mins.
In a bowl, whisk the egg yolk vigorously. Add the sugar and whisk again for about a minute. Then very slowly pour in the warm milk while continuing to whisk. When fully combined pour back into the jug and whisk again.
Now with the microwave set to full power cook for 3 mins, taking it out every 30 secs to whisk again. The mixture should thicken during cooking but not too much, will still be pretty runny. Leave to cool and then chill thoroughly in the fridge.
When the milk is fridge temperature, take out the vanilla pod and stir in the cream. Pour the whole thing into your ice cream maker and churn until set.
