If you have Jerusalem artichokes this is the best thing to do with them. Honestly.


Ingredients

Makes 2 servings

  • olive oil
  • 2 chicken breasts
  • 1 large or 2 small leeks
  • 6-8 jerusalem artichokes
  • juice of 1 lemon

Preparation (Some HTML is OK)

Peel and slice artichokes and leeks. Peeling artichokes can be a faff - i normally use a knife and cut off annoying nobbles rather than peel round them. Your artichokes need to be in slices about 2-3 mm thick. Cut chicken into pieces. In a large frying pan heat your oil over a med-high heat. When hot add your chicken for 2 mins. Turn heat down slightly and add artichokes and leeks for a further 10 mins. You want everything to have a brown tinge but not burnt. Add juice of lemon and lots of salt and pepper.
