This is a great appetizer if you're in a hurry. There are few things better than spreadable cheese.


Ingredients

Makes 4 servings

  • 1 pack of greek feta cheese
  • 2-4 tomatoes
  • 1 yellow pepper
  • 1 clove garlic
  • Pinch sea salt
  • Pinch ground pepper
  • ¼ cup olive oil
  • ½ teaspoon chilli pepper flakes
  • ½ teaspoon lemon zest
  • 2 teaspoons of fresh thyme

Preparation (Some HTML is OK)

Preheat your oven to 180'c. Finely grate the garlic and lemon skin and put in a small bowl with salt, ground pepper, chilli flakes and olive oil. Cut the feta into chunks and place them in a small baking dish with the yellow pepper. Poor the paste over top of the feta and smear it around until the top of each is covered. Dice the tomatoes and spread evenly over the top of feta. Place the baking dish into the oven and bake for 15mins until the cheese is soft. Serve with ciabatta or pita bread.
