Healthy version of a well loved recipe ... and it tastes great!


Ingredients

Makes 12 servings

  • 175g buckwheat flour
  • ½ tsp baking powder
  • 50g ground seed & nut mix (eg: flaxseed, walnuts, Brazils & almonds)
  • 150g caster sugar
  • 3 medium free range eggs, lightly beaten
  • 3-4 very ripe bananas, mashed
  • 4 tbsp olive oil
  • 1 tsp vanilla extract

Preparation (Some HTML is OK)

1. Preheat the oven to 180*C. Grease a loaf tin.

2. Combine the flour, baking powder, seed & nut mix and sugar together in a large bowl. Beat together the remaining ingredients in a separate bowl.

3. Stir the egg mixture into the dry ingredients. Pour into the loaf tin and bake for 1 hour, covering it loosely with tin foil after 30 minutes. It should be springy to the touch when cooked. Remove from the oven and cool for 10 minutes in the tin, then turn out on to a wire rack to cool completely.
