Ingredients

Makes 12 servings

  • 150g plain flour
  • 100g rye flour
  • ½ tsp salt
  • 1 tsp mustard powder
  • 4 tsp baking powder
  • 50g butter
  • 80g grated mature cheddar (plus a little more for putting on the top of the scones)
  • 1 egg, beaten
  • 150ml milk

Preparation (Some HTML is OK)

1. Pre-heat the oven to 220 degrees C.
2. Sift the flours, salt and powders into a large mixing bowl.
3. Rub in the fat until you have achieved breadcrumb consistency.
4. Add the grated cheese and mix in well.
5. Add the beaten egg and combine with the mixture.
6. Add the milk and mix until you have a nice soft dough.
7. Turn the dough out onto a floured surface and roll out until it is 1/4" thick.
8. Using a 2.5" cookie cutter, cut out 12 rounds.
9. Place the rounds on a warm baking tray, brush each one with a little milk, and then add some grated cheese on the top of each one.
10. Bake for 10-12 minutes.
