A big hit with the kids.


Ingredients

Makes 4 servings

  • 2 large skinless chicken breats, cut in half
  • 2 eggs
  • 75g grated parmesan
  • 75g breadcrumbs
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 500g passata
  • 1 tsp caster sugar
  • 1 onion, chopped finely
  • 1 tsp dried oregano
  • 125g ball of light mozzarella

Preparation (Some HTML is OK)

1. Mix half the grated parmesan with the breadcrumbs and place on a plate.
2. Place the chicken breasts between cling film sheets or in a freezer bag and bash with a rolling pin until they are nice and thin.
3. Dip into the beaten egg, then the breadcrumbs/parmesan mix and then place under a hot grill for 5 minutes on each side.
4. In a wide oven-proof saucepan, cook the onions and garlic in the olive oil for a few minutes, then add the passata, sugar and oregano. Season and simmer until the chicken is ready.
5. Place the chicken on top of the sauce and then scatter the remainder of the parmesan and the torn mozzarella over the top. Grill for 3 - 4 minutes.
6. Serve with pasta!
