Delicious chicken bits, ideal for lunch boxes. The cracker "flour" doesn't absorb oil as readily as a breadcrumb coating, and the cornflake bits give these a lovely crispy texture.


Ingredients

Makes 4 servings

  • 2 chicken breast fillets
  • 8 hard, plain crackers
  • 50g cornflakes
  • ½ tsp salt
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • Pinch of chilli powder
  • 1 egg
  • Oil for frying

Preparation (Some HTML is OK)

1. Put the crackers into a blender and grind into a fine powder.
2. Add the salt, chilli and herbs and give another quick burst in the blender.
3. Crush the cornflakes into smallish pieces and add to the cracker mixture.
4. Cut the chicken breasts into strips or chunks and dip in the beaten egg. Then place in the cracker mixture until covered completely.
5. Shallow fry in a little oil until golden brown and cooked throughout.
