Not to be confused with gingerbread men or biscuits, these are very nice, very moist little cakes - perfect when you don't have the time to bake proper gingerbread or parkin.


Ingredients

Makes 24 servings

  • 90g butter
  • 55g muscavado sugar
  • 5 tbsp black treacle
  • 1 egg white
  • 1 tsp almond essence
  • 175g plain flour
  • ¼ tsp bicarb
  • ¼ tsp baking powder
  • pinch of salt
  • ½ tsp mixed spice
  • ½ tsp ground ginger
  • 125g chopped apple

Preparation (Some HTML is OK)

1. Preheat the oven to 180 degrees C.
2. Grease and line a large baking tray.
3. Put the butter, sugar, treacle, egg white and almond into a food processor and blend until smooth.
4. In a separate bowl, sift together the flour, raising agents, salt and spices. Add the creamed mixture into the dry ingredients and beat together until combined.
5. Stir in the chopped apples.
6. Pour the mixture into the lined baking try and put in the oven for 15 minutes.
7. Remove from the oven and cut into 24 pieces. Transfer to a wire rack to cool.
