Delicious no-bake cheesecake.
Ingredients
Makes 8 servings
- 100g butter
- 250g digestive biscuits, crushed
- 600g Philadelphia cream cheese
- 25ml Baileys
- 100g icing sugar
- 300ml double cream, whipped
- 50g grated dark chocolate
- 50g drinking chocolate
- cocoa for topping
Preparation
1. Melt the butter in a pan and then add the crushed biscuits.
2. Mix well so that the crumbs are covered with butter and then press them into the base of an 8" springform cake tin.
3. Put in the fridge and chill for an hour.
4. Lightly whip the cream cheese. Beat in the Baileys and icing sugar.
5. Fold in the cream, grated chocolate and drinking chocolate.
6. Put the mixture into the cake tin and smooth round.
7. Chill in the fridge for another 2 hours, then dust with cocoa before serving.
