If you have ever eaten at a Carrabba's Italian restaurant, you, like me, have probably fallen in love with the spice mix they bring to the table and mix with olive oil for dipping your bread in. It's flavorful and has a zing that is a bit addictive. This mix recipe approximate's Carrabba's and can be changed to suit your tastes as desired.
Use fresh herbs, unless otherwise noted, for the best taste. Dried could be used in a pinch, but reduce the quantity in half. Increase the red pepper for more "zing".
Ingredients
Makes 1 serving
- 1 T. basil, minced
- 1 T. parsley, chopped
- 1 T. garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ½ teaspoon kosher or sea salt
- 1 teaspoon fresh cracked black pepper
- ½ teaspoon rosemary, chopped
- ¼ teaspoon crushed red pepper
- ½ teaspoon extra-virgin olive oil
- ⅛ teaspoon fresh lemon juice
Preparation
Combine all ingrediants, except for the olive oil and lemon juice, in a small food processor or spice mill and chop briefly. Stir in lemon juice and olive oil to create a semi-dry paste. This can be stored, refrigerated, until needed.
To serve, mix this paste at about 2 teaspoons spice mix to 4 Tablespoons olive oil.
