This soup is a modified, vegetarian version from an original recipe with bacon. It's simple, hearty and delicious if you like cheddar cheese, but doesn't really work unless you use good cheddar.


Ingredients

Makes 0 servings

  • 1 large onion
  • 1 lb potatoes peeled and chopped
  • 3 cups vegetable broth
  • ½ cup dry white wine
  • 2 cups grated sharp cheddar (8 oz, the sharper the better)
  • 2 tbsp chopped fresh chives

Preparation (Some HTML is OK)

Cook onion in oil until soft, then add broth and potatoes. Simmer 5-10 minutes, until potatoes are tender. Add wine, simmer one minute, then reduce heat and gradually stir in cheddar. Season with salt and pepper to taste, and garnish with fresh chives.
