This is a savory casserole with a potato base. It is easy to prepare and great for a family in need of food! It is a staple at family gatherings.


Ingredients

Makes 6 servings

  • 2 pounds frozen hashbrowns
  • ½ cup unsalted butter, softened
  • ¼ cup melted margarine
  • 1 can cream of chicken soup
  • 1 tsp. salt
  • ¼ tsp. freshly cracked black pepper
  • ½ cup chopped onions
  • 2 cups sour cream
  • 2 cups grated mild cheddar cheese
  • 3 cups crushed cornflakes

Preparation (Some HTML is OK)

Thaw the potatoes and preheat your oven to 350 degrees.

In a large mixing bowl mix together the unsalted butter, salt, pepper, onion, sour cream, cream of chicken soup, and cheese. Add in the potatoes and stir until combined. Pour the mixture into a 3 quart casserole pan.

In a separate bowl, mix together the cornflakes and the melted margarine. Put this mixture on top of the potato mixture in the casserole pan, and bake for 45 minutes.
