Maximum flavour using thrifty cuts of lamb.
Bake in one dish with vegetables for a hearty meal.


Ingredients

Makes 2 servings

  • 400g new potatoes, cut in half
  • 2 onions, peeled and thickly sliced
  • Punett of cherry tomatoes
  • Handful of fresh rosemary
  • Handful of fresh thyme
  • 4 large garlic cloves, peeled and crushed
  • 500ml hot lamb stock
  • 1 glass of white wine
  • Fresh ground black pepper

Preparation (Some HTML is OK)

1. Preheat oven 180C

2. Place potatoes, onions, garlic, tomatoes, herbs in a baking dish. Season with pepper. Place lamb chops on top. Season with more pepper.

3. Pour stock over lamb and vegetables, followed by glass of wine.

4. Cook in the oven for 1.5 hours, turning the chops over half way and basting

Serve and enjoy!
