Vegan-adapted (and regular) versions of my grandma's banana bread recipe.


Ingredients

Makes 0 servings

  • ½ cup margarine or butter
  • ¾ cup demerera or brown sugar
  • 2 eggs or equivalent egg replacer, or 1/2 cup of applesauce
  • 2 cups flour
  • 1 tsp baking powder
  • ½ cup milk or soy milk
  • 2 ripe bananas, mashed*
  • optional: chocolate chips
  • Note: I usually just take bananas as they're getting brown and throw them in my freezer for indeterminate amounts of time. They turn black, but they'll stay good for a long, long time for banana bread purposes.

Preparation (Some HTML is OK)

Cream margarine and sugar well. Add egg replacer mixture, egg, or applesauce, and beat well. Sift dry ingredients together and add to creamed mixture alternately with the milk or soy milk. Fold in mashed bananas and chocolate chips, if using them.

Pour into a greased loaf pan, and bake at 350°F for 1 hour.
